Herring preservation with Salt

In my past experience my grandfather and I used to fillet and then salt our herring for the season and store in clean coffee cans in the refrig. Am I not remembering correctly or is this a successful way of storing bait.



Or any others doing this same method still.

Easy II there are countless theories to the correct way of salting herring. I know guys who put borax with the salt and others who put a little powdered milk also. They claim it brings out the shine in the scales.



I salt mine the night before. I put them in tupperware and completely cover in salt and the next morning drain the juice and add just a little fresh clean saltwater keeps them from getting stinky and nasty. I like them hard enough to help stay on the hook and not "washing out" but not so hard they get deformed and not "roll" good!

I do it the same way as akfish when I'm salting. I've used unsalted, fresh herring too in the spring, and have had very good results.

I agree with the previous except that I don't want my herring rolling behind a flasher.
